A special case amongst vegetable preserves are the famous Piquillo de Lodosa peppers. Since 1987, these have been protected by the Designation of Origin (PDO) Pimiento del Piquillo de Lodosa. In the Bierzo district in Castile-Leon, peppers have been grown since the 17th century. Their outstanding quality has earned them the Protected Geographical Indication (PGI) Pimiento Asado del Bierzo. Another vegetable that is considered a delicacy in the canned version is the artichoke. Those from Tudela in Navarra are very much in demand, both fresh and canned, the latter either as whole hearts or halves. They are covered by the PGI Alcachofa de Tudela. A vegetable with great gastronomic value that is often canned is asparagus. In order to find the best canned asparagus, we turn back to the Ribera del Ebro. The growing and production area covers various districts in La Rioja, Aragón and Navarre, which are covered by the PGI Espárrago de Navarra.

Chestnuts in Syrup Prada a Tope 390 gMade from the “Pared” chestnut variety. Chestnuts are soaked for two days and the peel is removed by hand. The peeled chestnuts spend another day of soaking to soften their inner meat, before being briefly boiled in small batches of only 20 to 30. Then they are tenderly hand-wrapped in squares of gauze (to hold their shape) and cooked with sugar intermittently for five hours over three days. Finally, they are drained and combined with the syrup from the cooking process in glass jars, which are heated and sealed.
