Made since at least the 1700’s, Chorizo de Cantimpalos can only be produced in the towns and villages of Segovia (Castile-Leon) that are officially recognized as producers of this traditional gourmet product. It is seasoned with salt and at least 50% IGP Pimentón de la Vera (a type of Spanish paprika), and might also include other spices such as garlic and oregano. Tasting notes: Consistency: firm to the touch, not too hard or soft and of even appearance throughout the sausage. On the palate, its consistency must be juicy and cohesive, easily chewed, not very fibrous and free from undesirable matter. On the whole, its taste must be pleasant and not spicy.
