Black Pork Sobrasada de Mallorca PGI
The most exquisite sobrasada. It is made with different parts of the Porc Negre, a Majorcan native pig breed that is bred in the wild, and eats figs, carobs, cereals and legumes.
Flavor, aroma and texture highly prized by gourmets. The time of cure is from 6 to 12 weeks, and it weights around 800 grams. In this type of sobrasada, the paste is stuffed inside the large intestine.
The traditional way of eating sobrasada in Majorca is spreading it on a slice of bread. Anyway, this option has multiple alternatives: spreading the sobrasada on a slice of bread with honey, sugar, or apricot jam on top, on pizzas... Currently, the sobrasada has been integrated in simple recipes with meat, vegetables, fish or desserts.
