The aroma exudes a fragrance of apples and tomatoes, with some banana and olive foliage; with green walnuts (“very nice bitter”) on the palate – this oil leaves a more spectacular impression in the nose than on the palate and has a finish with minuscule spicy accents.
For culinary uses at home, we recommend a classic salmorejo with diced Jamón-Ibérico and deep-fried, honey-seasoned aubergines or a salad of dried cod, oranges and fennel (with garlic, onions and more garlic depending on your disposition).
For dessert lovers: deep dark chocolate ice cream with cocoa flakes, a coulis made from lightly caramelised apricots heated in a pan with muscovado sugar, a few drops of apricot kernel oil with double or triple the amount of “Picual” drops as a counterpoint.
