AGUSTI TORELLO MATA Vinegar 375ml
Agusti Torello Mata Cava uses traditional, local grape varieties: Macabeo, Xarello and Perellada. They use this Cava to make their barrel-aged naturally fermented vinegars. The whole process takes several years – 18 months to make the Cava (some of this in French Oak), then it is acidified and barrel aged for another 8 months. Then it is transferred to American Oak for another year. The resulting vinegars have excellent flavour with plenty of upfront fruit and an effervescent mouth feel. Try it with everything from oysters to roasted potatoes to a fresh green salad and it works beautifully in any vinaigrette.
