Has an intense dark mahogany colour with shiny amber-like highlights. This type of vinegar is notable for its powerful aroma and rich variety of nuances: vanilla, dried fruits and wine-soaked wood. Its acidic dry taste is strongly reminiscent of its place of origin, Jerez. The ageing process of the vinegars belonging to this category takes between two and ten years.
