Thin-skinned and easy-boiled, pinto bean’s main characteristic is its high iron content, higher than in most of legumes. When cooked the bean retains its shape reasonably well, with a smooth and very soft skin, the inside is soft, buttery, very smooth and quite floury. Preparation tips: Wash them with cold water and put it to soak from 8 to 12 hours (night before you are going to cook them). Put them together with the ingredients for its seasoning (leek, carrots, garlic, peppers, onions and cold cuts or meat: bacon, sausage, ribs…) and boil them. Cooking must be slow and continuous, avoiding the lack of water, for approximately 2 hours in a casserole. When using a pressure cooker it takes 15 minutes. Legumes are a complete food as they provide protein, fiber, minerals and vitamins and they are low in fat. It is recommended to consume them twice or three times a week. Due to hygienic and quality reasons, they come in a vacuum pack, as is the perfect way to preserve food as it keeps its properties intact, it protects its smell and flavor and it avoids the product absorbing the atmosphere humidity or smells.
