ARBOLEDILLA Palo Cortado Bota Unica Barbadillo 37,5 clAmazing Palo Cortado from the Arboledilla bodega at Barbadillo, Sanlúcar de Barrameda (Cádiz). 22% Although the exact age is unclear to me, as all four botas were aged "unrefreshed" during thirty years in a single 800L-2000L barrel, but the age of the original botas, as far as I know, hasn't been disclosed. This incredibly complex wine has a rather low, well-balanced acidity which makes it surprisingly round and maybe closer to what I have come to expect from very old olorosos. It’s extremely rich and savoury, with prominent notes of dried tobacco, soy sauce, roasted nuts and a vegetal, empyreumatic layer that adds to its incredible range. Additional notes include dried figs, dried apricots, dried nuts, some orange peels, salted caramel, a lovely lactic acidity and still this elegant hint of smoke accompanied by loads of umami which keeps me reaching for my glass. One of the best Palo Cortados I have ever tasted. Don’t hesitate to pair it with food as foie gras, cured meats bor old cheeses but it really shines the most when drank on its own. LA PANESA Fino Emilio Hidalgo 75 clA wine suitable for any occasion. Great pairing with seafood and fish dishes. Serving temperature: 5/7ºC Nose: highly complex. It goes all the way from a warm, honeyed apple note to the smell of a stable. In between are dozens of tiny aromas: banana peel, yeast, polished oak, salty seawater, lime, aged cheese, toasted wood and dried mushrooms. Even hints of motor oil. Quite exquisite really. Mouth: medium-bodied and fairly glyceric. It shows a remarkable peppery heat and concentration. An olive brine bitterness, some toasted notes and salty almonds. Lemon zest. After the initial attack though, there’s a lack of acidity and an additional nuttiness which make it feel smooth and slightly thin. This also results in a rather short finish with some oaky notes. After blending, the wine is further aged for three years in a solera of 33 American oak casks before bottling. A dark mahogany colour with bronze hues. Concentrated aromas of ripe fruits, mocca, cocoa and toffee. Very complex on the palate, with a clean acidity and flavour of raisins, nuts, crystallized orange and candied peel.

Serving temperature: 10/12ºC Nose: furniture polish mixed with berries (raspberry / cranberry) and Mediterranean herbs. A resinous note and a touch of brandy. A salty touch as well. Maybe not the most intense Oloroso nose, but a very balanced and elegant old wine nonetheless. Mouth: potent, but not as extreme as I imagined (which is a positive thing, I guess). Sure, the acidity is higher than average and there’s a light bitterness from the wood, but it’s rather rounded and still very drinkable. There’s a light caramelly sweetness and a touch of glycerin, with roasted hazelnuts, a hint of tobacco / smoke and and echoes of dried fruits. Balanced leathery dryness in the end. Solera 1830 Pedro Ximenez Alvear 50 clMontilla-Moriles DO. Amber colour. Bright and very dense aspect in the glass. Primary aromas coming from the raisin grape from which it comes, with a slight "woody" touch and well integrated alcohol. Sweet flavour, "concentrated", without getting cloying. Memories of raisin grapes, honey, figs bread and dates come back. Serve it at 8ºC. Well suited for cured cheeses and desserts, whenever they are not made with chocolate.

1905 Pérez Barquero Pedro XimenezMontilla-Moriles DO. This wine explodes from the glass, with waves of date, fig, spice box, and dried fruits. The finish lasted at least 120 seconds. A monumental wine, with a perfect mouth feel despite its motor oil-like viscosity. All the rich figs, raisins, prunes, add to that oranges and mandarine marmelade ... it's wow.

Types of Fortified Wine
Generosos:
These are quality wines made during total or partial ageing under the veil of flor – the biological process undergone through the spontaneous appearance of a veil of yeasts on the surface of the wine typical to the Jerez area, which contributes a series of specific analytical and organoleptic properties to the wines. The alcohol content of these wines is no lower than 15º. Manzanilla: This wine is a pale, straw colour, with a tangy aroma, dry and light in the mouth, with an alcohol content of 15º. Its unique characteristics are the result of a very particular ageing process under the veil of yeasts in the microclimate of the cellars located in Sanlúcar de Barrameda. Traditionally and according to the crianza and ageing process, these wines are known as Manzanilla Fina, Manzanilla Pasada and Manzanilla Olorosa. Fino: Straw-coloured or golden, finos have a spicy, delicate aroma reminiscent of almonds, and are dry and light in the mouth. Their special properties are the result of the exclusive ageing process under the veil of flor. They have an acquired alcohol content of 15º. Fino should also be served cold. Amontillado: The ageing process used in these wines includes an initial phase under the veil of flor – similar in procedure and duration to that undergone by finos - followed by a phase of oxidative ageing. The result is an amber-coloured wine with aromas of hazelnut, mildly tangy, soft and full in the mouth, with an alcohol content of between 16º and 22º. |
Palo Cortado: A wine with organoleptic properties somewhere between amontillado – its aroma is similar – and oloroso – with a comparable palate, colour and ageing process. These wines have an alcohol content of between 17º and 22º.
Generosos Liqueur: These are made from Generoso wines. They must contain no less than 5 gr/l of sugars.
Medium: Amber or mahogany coloured wine, with an acquired alcohol content of no less than 15º and no more than 115 grammes per litre of sugars. In particular markets, traditional terms such as 'Golden', 'Abocado, 'Amoroso', 'Brown', 'Milk' or 'Rich' may be used.
Pale Cream: This wine is a pale yellow in colour, with a tangy, delicate aroma and alcohol content of no less than 15.5º. Its sugar content may not exceed 115 grammes per litre.
Cream: A full-bodied wine, amber to mahogany in colour, with a light, spicy aroma, an acquired alcohol content of no less than 15.5º and between 115 and 140 grammes per litre of sugars. It is a product of the blending of an oloroso with the suitable proportion of sweet wine.
Naturally Sweet: These wines are made from very ripe or sun-dried grapes that undergo partial alcoholic fermentation, which is halted through the addition of vinic alcohol.
Pedro Ximénez: Made from a variety of grape of the same name. Dark mahogany in colour with sweet aromas of raisins from the high natural sugar content, it is a rich dessert wine.
Moscatel: Sweet natural wine made from sun-dried grapes of the same name. In colour, it ranges from golden to mahogany, depending on its age.
