Extra Virgin Olive Oil Caviar from Spain by the chef and culinary genius Ferran Adria. It took Adria over two years of research to "fine-tune" this upmost product. So you would expect by its name, the thin caviar membrane bursts in your mouth releasing the aromas of exquisite and renowned Spanish Extra Virgin Olive Oil.
Caviaroli is made using a new technique which surrounds olive oil drops with a thin layer of water containing sodium alginate. The drops are then immersed in a calcium bath, resulting in a fine gelatine-like capsule around the oil drop to form the caviar. With this patented method, the olive oil inside the sphere remains 100% pure.
Caviaroli doesn’t need to be eaten immediately on opening or all at once. It stores for several months in the fridge, making it easy and convenient to use at any time.
